Rockstar Games is tight-lipped about any Grand Theft Auto VI developments. However, this has not prevented leaks and insider information from being revealed from time to time.
Recently, @GTAVI_Countdown on Twitter revealed their observations regarding police in Grand Theft Auto VI, based on the early gameplay leak in September 2022. It was mentioned that police can now recognize vehicles if the cops see you entering the vehicle. A time delay has been added to the arrival at the crime scene, and they will surround the area instead of rushing in immediately, along with the option to surrender before shooting.

The ability of the police to recognize vehicles means that in Grand Theft Auto VI, players will not be able to respray the vehicle and get away from the police. This will add a whole new level of depth to the police pursuits.
Police will also take their time in appearing at the crime scene. This will make police pursuits more realistic instead of directly spawning onto the scene within seconds.
The video source of these observations was leaked in September 2022 due to a network intrusion. Rockstar Games confirmed the leaks. However, all videos were after that copyrighted and removed from YouTube.
The details can be seen in one of the leaked clips titled ‘Americas 2021-07-12 12-19-51’, that shows a Waffle House robbery but can’t be shared here due to copyright reasons.

In that video, it was shown that police AI would be pretty advanced compared to GTA V. The police were seen shooting in open areas before taking cover behind vehicles.
The Star System of Wanted Level will continue, as seen in the video. In the same video, it was spotted that combat has undergone minor improvements since GTA V.
The most significant addition to combat is the ability to go prone. This is a significant change compared to previous titles where the player could only crouch. The video showed Jason crawling around in a shed.
This could hint that GTA VI will feature stealth-based missions instead of out-and-out shooting. Some fans speculate that this is the last month of complete silence on the GTA VI front by Rockstar Games. News is expected soon enough.
